Executive Chef Dustin Vallance
Originally from Portland, Oregon, Executive Chef Dustin Vallance began his culinary career in 2001 and has been with the Benbow Historic Inn since 2012. Dustin’s passion for culinary arts was inspired by iconic chefs Anthony Bourdain and Alice Waters. His seasonal menus focus around the four seasons of the Lost Coast, utilizing locally sourced seasonal produce and meats on a regular basis. With an emphasis on local seafood, beef, lamb, poultry, vegetables and herbs from the Inn’s garden, Chef Vallance offers a modern take on Classic American cuisine.
Sous Chef Jennifer Springer-Vallance
Teaming with her husband in the kitchen is our multi-talented Sous Chef and Head Pastry Chef, Jennifer Springer-Vallance. Growing up in nearby Fortuna, Jennifer is known for her absolute mastery of desserts. Perennial guest favorites include Key Lime Pie, Truffles and her sumptuous Cheesecakes. In 2013, Jennifer was honored as Benbow Historic Inn’s Employee of the Year!
