Executive Chef Dustin Vallance
Executive Chef Dustin Vallance began his culinary career in 2001 and joined Benbow Historic Inn in 2012. Originally from Portland, OR, Dustin’s passion for culinary arts was inspired by iconic chefs Anthony Bordain and Alice Waters. His seasonal menus are inspired around the four seasons of the Lost Coast, created utilizing locally sourced products within a 200-mile radius of the Inn. With an emphasis on local seafood, beef, lamb, poultry, vegetables and herbs from the Inn’s garden, chef Vallance’s offerings can best be described as California Classic Fusion.
Sous Chef Jennifer Springer-Vallance
Teaming with Chef Vallance in the kitchen is his multi-talented Sous Chef and wife, Jennifer Springer-Vallance. Growining up in nearby Fortuna, Jennifer is known for her mastery of desserts and perennial guest favorites that include Key Lime Pie, Truffles and her sumptuous Cheesecakes. In 2013, Jennifer was honored as Benbow Historic Inn’s Employee of the Year.
